Sweet Potato Casserole

Ingredients

  • Casserole:
  • 5-6 sweet potatoes, mashed
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1/2 cup milk
  • Crust:
  • 2/3 cup brown sugar
  • 1 cup softened butter
  • 1/2 cup flower
  • 1 cup pecans (optional but good)

Preparation

Step 1

Peel and cut up sweet potatoes (watch fingers, sweet potatoes hard to cut up).

Cook on stove (covered with water) until fork inserts easily into potatoes.

Drain water off potatoes (very hot).

Mash potatoes and add all the casserole ingredients to the mashed potatoes and mix well.

Cream all of the crust ingredients together.

Hints: Put sweet potato mixture in a greased 9x13 and refrigerate while making crust. It stiffens and makes it easier to spread on the crust. Also, after mixing all of the crust ingredients together, I put in the microwave for a few seconds to soften more.

Spread crust on sweet potato mixture and cook for 30 mins on 350 degrees
