Twice-Baked Potatoes

Ingredients

  • 4 large baking potatoes
  • 1/2 stick butter
  • 1 8oz onion dip or sour cream
  • 3/4 -1 cup sharp shredded cheddar
  • 4 oz cream cheese
  • Jalapeno peppers, chopped
  • 4 slices bacon, fried crisp and crumbled
  • Salt and pepper to taste

Preparation

Step 1

Bake the potatoes at 375° for 1-1 1/2hour or until tender.

Cool. Cut each potato in half longways.

Scoop out pulp, leaving a thin shell.

In a large bowl, mash the pulp mix well with all the other ingredients
salt and pepper to taste.

Spoon into the potato shells.

Place on an ungreased baking sheet. Bake at 275° for 25-30 until heated through. Sprinkle with remaining cheese. Yield: 8 servings.
