Ingredients

  • 2 TPS - Kosher salt
  • 2 C - fine quick cook grits (not instant)
  • 1 1/4 C - Half and half
  • 2 TBS - Unsalted butter
  • 4 OZ - Grated aged sharp cheddar cheese
  • 1/2 C - Chopped scallions (white and green parts)
  • 1/2 TPS - White pepper

Step 1

Bring 4 qts water to a boil. Add salt, and slowly add grits, stirring constantly. Rdeuce heat, and simmer until grits thicken (app 5 -7 minutes). Add half and half and butter and stir in. Bring to simmer and cook for 45 minutes until smooth and creamy. Stir in cheese, scallions, and pepper. Sprinkle cheese and scallions on top for garnish. Serve
