Ingredients
- 1 cup softened coconut oil
- 1 cup pumpkin puree
- 1 1/2 cups brown sugar
- 1/4 ground flax seed
- 1 tbs vanilla
- 3 cups oat flour (best if you grind oats in processor yourself)
- 1 cup rolled oats
- 3/4 baking soda
- 3/4 tsp sea salt
- 4 tsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground nutmeg
- Optional - 1/2 cup raisins

Step 1
Preheat oven to 350. Using a mixer, combine coconut oil, pumpkin, sugar, flax seeds, and vanilla. Add remaining ingredients and beat. Fold in raisins. Rest dough on counter for 20 minutes to allow oat flour to absorb liquid. Drop by spoonfuls onto ungreased cookie sheet. Bake for 12-15 minutes or until golden brown around edges. Cool on rack.
