Acorn Squash Soup

Ingredients

  • 2 lbs Acorn squash, seeded (about 2)
  • 1 onion, chopped
  • 1 T butter
  • 4 C chicken broth
  • 1 T sugar, optional
  • 1/2 C heavy cream or half & half
  • salt and pepper to taste
  • 1 dash ground nutmeg
  • 1 dash ground cinnamon

Preparation

Step 1

In a large microwave safe dish, place squash halves meat side down in 1/4 cup of water. Microwave 8 to 10 minutes until soft.

Saute onions in butter and add squash and broth. Cover and cook for 20 to 25 minutes. Puree mixture either chunky or smooth, whatever your preference. Add cream and seasonings and cook until heated. Flavor with sugar to taste.
