Freakin Awesome Fish Tacos

Ingredients

  • Pickled Onions:
  • Corn Tortillas, heated
  • Cooked fish
  • Shredded Cabbage
  • Crumbled Cojita Cheese
  • Avocado Slices
  • Lime Wedges
  • 1 large red onion, thinly sliced
  • 1/2 cup cider vinegar
  • 1/4 cup sugar
  • 1/2 tsp salt
  • Lime Crema:
  • 2/3 cup Sour cream
  • a scant 1/3 cup mayo
  • 2 T lime juice
  • 1 heaping tsp lime zest
  • pinch kosher salt
  • Corn and Pepper Relish:
  • 2 ears of corn
  • 1/2 cup red onion, chopped
  • 1/2 cup red bell pepper, diced
  • 1 cup cilantro
  • 1 lime zested and juice

Preparation

Step 1

Pickled Onions:
Heat the vinegar, sugar, and salt in a saucepan until sugar melts. Remove from heat and stir in onions. Let stand at least an hour. (I usually make them some time around lunch and leave them out at room temp until dinner, stirring them occasionally.)

Lime Crema:
Combine all ingredients and refrigerate.

Corn and Pepper Relish
Remove kernels from ears into a bowl and add remaining ingredients. Toss and add salt to taste. Refrigerate until ready to serve.
