Zucchini "Pasta" Caprese

Ingredients

  • 3 Tbsp. olive oil
  • 2 lbs. sm. zucchini, spiralized
  • 12 oz. ripe tomatoes, chopped
  • 8 oz. fresh mozzarella, cut into 1/2-in. cubes
  • 1/2 C loosley packed fresh basil leaves, torn
  • 2 Tbsp. capers, chopped
  • 2 cloves garlic, crushed with press
  • 1/4 C roasted salted almonds, chopped

Preparation

Step 1

In 12-in skillet, heat oil on med. until hot. Add zucchini. Cook 1 to 2 min. or until just beginning to soften, stirring. Remove from heat; transfer to large bowl.

To bowl with zucchini, add tomatoes, mozzarella, basil, garlic and 1/2 tsp. salt. Gently toss to combine.

Serve immediately, topped with almonds.
