Ingredients
- 4 bone-in thin pork chops (about 1 1/2#)
- 1 tea. ground cumin
- 1/2 tea. kosher salt
- 1 tea. oil
- 1 cup fresh corn kernels
- 1 cup salsa
- 1/3 cup chopped cilantro
- Lime wedges
Preparation
Step 1
Sprinkle chops with cumin and salt. Heat oil in a large nonstick skillet over med-high heat. Add chops and cook 3-4 minutes per side until just cooked through. Remove to a serving platter.
Saute fresh corn kernels in same pan over high heat until light golden. Remove from heat; stir in salsa and cilantro. Spoon over chops and serve with lime wedges, if desired.
