Black Bean, Corn and Tomato Salad

Ingredients

  • 1 ½ c. rice, cooked (I used brown)
  • 1 (15-oz) can black beans, drained, rinsed
  • 1 each orange and red bell pepper, chopped
  • 1 (10 oz) package frozen corn, thawed
  • 1 ½ c. chopped seeded tomatoes
  • ¾ c. thinly sliced scallions or green onions
  • 1/3 c. fresh cilantro, chopped
  • ½ c. fresh lemon juice
  • ¼ c. olive oil
  • ¼ c. vegetable oil
  • 2 tsp. Salt
  • 1 Tbs.cumin
  • 1-2 dashes of Tabasco

Step 1


Combine rice, black beans, peppers, corn, tomatoes, scallions and cilantro in large bowl. Mix remaining ingredients in bowl, pour over the black bean mixture, mix well. Chill for 6 hours or longer before serving.

Makes 4-6 servings
