Black Bean, Corn and Tomato Salad

Ingredients
- 1 ½ c. rice, cooked (I used brown)
- 1 (15-oz) can black beans, drained, rinsed
- 1 each orange and red bell pepper, chopped
- 1 (10 oz) package frozen corn, thawed
- 1 ½ c. chopped seeded tomatoes
- ¾ c. thinly sliced scallions or green onions
- 1/3 c. fresh cilantro, chopped
- ½ c. fresh lemon juice
- ¼ c. olive oil
- ¼ c. vegetable oil
- 2 tsp. Salt
- 1 Tbs.cumin
- 1-2 dashes of Tabasco

Step 1
Combine rice, black beans, peppers, corn, tomatoes, scallions and cilantro in large bowl. Mix remaining ingredients in bowl, pour over the black bean mixture, mix well. Chill for 6 hours or longer before serving.
Makes 4-6 servings
