CREAMY TOMATO SHRIMP SCAMPI CASSEROLE

Ingredients

  • 3 slices sourdough bread, chopped in grinder
  • olive oil
  • garlic/garlic seasoning
  • 4 tablespoons melted butter
  • 2 lbs peeled raw shrimp
  • 14 ounce can diced tomatoes
  • ½ lb mascarpone cheese

Preparation

Step 1


make bread crumbs and add enough olive oil to well coat, set aside.

In small saucepan, heat tomatoes to boil and let juice reduce by half.
Stir in mascarpone cheese until creamy.

Arrange shrimps in bottom of pam sprayed glass baking dish.

Pour over melted butter and sprinkle with garlic seasoning.

Pour creamy tomatoes over shrimp.

Top with crumbs.

Bake in 375 degree oven 20-25 minutes until shrimps are cooked and topping is crispy.
