Seafood Casserole

Ingredients

  • 2 lbs. scallops
  • 2 cups white wine
  • 1/4 cup butter
  • 4 green onions, chopped
  • 24 mushroom caps, finely sliced
  • 2 tbsp. parsley
  • 2 tbsp. flour
  • 4 tbsp. whipping cream
  • 1 cup bread crumbs
  • some butter

Preparation

Step 1

Wash scallops; simmer in white wine for 5 minutes. Drain and reserve liquid. Melt butter (1/4 cup); saute green onions, mushrooms and parsley. Stir in flour; Add reserve liquid and whipping cream. Cook until slightly thicken, for 4 to 5 minutes at 300*. Stir in scallops and place in greased shallow casserole dish.Top with bread crumbs; dot with butter. Broil until golden brown for 2 to 3 minutes.
If doing a day ahead, cook for 30 minutes and broil for 2 minutes.
