Broccoflower with Anchovies and Garlic

Ingredients

  • 1 head broccoflower, or cauliflower
  • 1/4 cup olive oil
  • 3 cloves garlic, sliced
  • 2 1/2 teaspoons anchovies
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup pine nuts, toasted
  • 1/4 cup golden raisins
  • 2 tablespoons fresh parsley

Preparation

Step 1

1. Cook broccoflower in boiling water until crisp-tender, about 5 mins. Remove to ice water, drain and pat dry.

2. Saute garlic in oil 1 min. Add anchovy and pepper, saute 1 min.

3. Add broccoflower - separated into florets. Toss with nuts, raisins, s&p. Saute 2 mins, garnish.


Notes: This was delicious! Made as written except for reducing the olive oil by half and using cauliflower instead of broccoflower. David loved this too.
