Coconut Cake Cookies

  • 1 cup unsalted butter, melted
  • 2 cups cream (half & half)
  • 3 eggs
  • 1 1/2 cups sugar
  • 2 tsp coconut extract
  • 3 tsp baking powder
  • 2 tsp baking soda
  • 4 cups flour

Preparation

Step 1

Preheat oven to 350.
Mix cooled melted butter with sugar in a large bowl until well blended. Beat eggs, vanilla and cream together then stir into butter and sugar mixture. In a separate bowl whisk dry ingredients together, then slowly stir into wet ingredients. This makes a very soft dough. Drop by spoonful on to a cookie sheet lined with parchment paper keeping an inch between cookies as they will spread slightly. Bake for 8 minutes, test with finger for firmness.

When cookie is cooled ice top with a butter icing and sprinkle with toasted coconut.
