GORGONZOLA SAUCE

Step 1

Bring 4 c heavy cream to a full boil over medium high heat, then continue to boil rapidly for 45-50 seconds, until it is thickened like a white sauce, stirring occassionaly. Remove from heat and add 3-4 oz crumbly Gorgonzola, 3 tbps fresh grated Parmesan cheese, 3/4 tsp salt, 3/4 tsp pepper and 3 tbps minced parsley. Whisk rapidly until cheeses melt and then serve. WE TRIED THIS ON 1/3/11 AND IT WAS VERY GOOD. WE HAD IT WITH TENDERLOIN, AMAZING.
