Ingredients

  • 2 C. All Bran Cereal
  • 1 C. Fiber One Cereal
  • 1 C. Boiling Water
  • 2 C. Buttermilk
  • 2 tsp. Baking Soda
  • C. Molasses (or honey)
  • 2 Eggs
  • 1/3 C. Oil
  • 1 C. Wheat Germ
  • 1 C Whole Wheat Flour
  • 2 Mashed Bananas or applesauce
  • to C. raisins or dates
  • Cinnamon & nutmeg to taste

Preparation

Step 1

Mix bran & water and set aside. Pour buttermilk into large mixing bowl. Stir in soda, honey, eggs, oil, bananas and cereal mixture. Combine wheat germ & flour. Add to wet mixture. Add raisins. Pour into greased muffin tins and bake at 350 for 20 to 25 minutes. Batter can be refrigerated for 6 weeks.
