Ingredients
- 4 * 4 medium sweet potatoes, peeled and cut into sticks 1/2 cm (1/4 inch) thick
- * Canola or peanut oil for frying
- 3/4 * 3/4 cup potato starch
- * Salt and pepper

Directions
1. Drop the sweet potato sticks in water and soak for at least 5 minutes. Drain well without letting them dry completely.
2. Heat the oil, setting the fryer to high.
3. Lay the fries out on a cookie sheet, sprinkle with potato starch and toss. Fry immediately until gold and crisp, 4 to 5 minutes. Remove from the oil and drain on paper towels.
