Banana-Walnut Scones

Ingredients

  • 3 cups all-purpose flour
  • 1/2 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3 tablespoons butter, chilled
  • 1/4 cup lowfat buttermilk
  • 1 teaspoon vanilla extract
  • 2 large egg whites
  • 1 cup mashed banana, about 2
  • 1/3 cup walnuts, coarsely chopped
  • 1 tablespoon brown sugar

Preparation

Step 1

1. Heat oven to 400.

2. Combine flour-baking soda, cut in butter until mixture resembles coarse meal.

3. Combine buttermilk-egg whites. Add with banana to flour, stirring just until moist (will be wet and sticky).

4. Turn out onto lightly floured surface; with floured hands, knead lightly 4 times. Pat into 9" circle on sprayed baking sheet. Sprinkle with walnuts and sugar, pressing gently into dough. Cut into 12 wedges, cutting into, but not through, dough. Bake 20 mins or until golden.

Notes: This was good -the fact that they weren't better was due to the fact that I forgot to separate the scones before baking. So by the time I got them baked through, they were too well done. Taste was great though and they were easy. Dissimilar from classic scones - more of a muffin texture - but still good.
