Katie's Carrot Suprise

Ingredients

  • 3 Tbs. olive oil
  • 4 garlic cloves chopped
  • 5 large carrots cut into rounds
  • 1/4 tsp. salt
  • pinch sugar
  • 1/2 cup water
  • 6 green onions, cut into thin rings
  • 4 Tbs. mayonnaise
  • 2 Tbs. fresh cream (milk works)
  • 2 Tbs. chopped fresh mint leaves
  • 1/2 tsp. cayenne (optional)

Preparation

Step 1

Heat olive oil over medium-high heat, add garlic and stir a little. Add carrots, salt, sugar and water, and steam, covered, on low heat until half-cooked.

Mix green onions in mayonnaise, fresh cream, mint and cayenne.

Add onion mixture to steamed carrots and blend well.

Serve warm or room temperature.
