Pecan Pie Cookies (Raw)

Sweetened with dates, packed with pecans, and spiced with cinnamon and a hint of orange. They travel well, so keep them in your bag for a quick healthy snack.

Ingredients
- 1 cup pecans
- 1 tsp ground cinnamon
- 1 tsp orange oil or orange juice
- 1 cup pitted medjool dates
Preparation
Step 1
Combine the pecans, cinnamon, and orange oil in food processor and pulse into small chunks. Add the dates and process until well mixed. Scoop the dough by
1 1/2 Tablespoons onto a sheet tray lined with parchment and flatten into cookies.
Will keep for a week in the fridge or several weeks in the freezer. (thaw before eating)
