Ingredients
- YIELD 4 CUPS
- 2 large heads cauliflower, cut into florets
- 6 cloves garlic, peeled
- 3 cups chicken broth, homemade or low-sodium canned
- 3 ounces feta cheese
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/8 teaspoon freshly ground pepper, plus more to taste
Preparation
Step 1
Place the cauliflower, garlic and chicken broth in a deep saute pan. Bring to a boil. Reduce to a simmer. Cover and cook until , about 50 minutes. Drain.
Place the cauliflower and garlic in a food processor. Puree until smooth. Add remaining ingredients. Process until smooth.
Serve with crackers.
