Ingredients

  • 1 lb. boneless skinless chicken thighs
  • salt, pepper
  • 1/2 c. diced onions
  • 1 c. honey
  • 1/2 c. soy sauce
  • 1/4 c. ketchup
  • 1 T. canola oil
  • 2 garlic cloves, minced
  • 1/4 tsp. red pepper flakes
  • 1-2 T. cornstarch
  • sesame seed (optional)
  • 1/4 c. bourbon (optional)

Step 1

Salt and pepper the chicken thighs. Place in gallon Ziplock freezer bag.

In bowl, mix honey, soy sauce, ketchup, oil, garlic, pepper flakes, bourbon and onion. Add to bag. Zip and refrigerate 1 hour (or put in freezer for later).

Empty contents into crock pot; cook on low 3-4 hours.

Remove chicken, slice into strips.

Raise heat on crock pot. Combine 1 T. cornstarch with 1 T. water. Pour into crock pot and mix. If it doesn't thicken, add another T. cornstarch/water.

Turn off crock pot. Return chicken to crock pot and stir to coat.

Serve over cooked rice; sprinkle with sesame seeds if desired.
