Ginger and Roasted Peach Tequila Milkshake

  • 1/2 peach, pitted and sliced (peel if you want to, but it's not necessary)
  • 1 tbsp agave
  • 2 large chunks of crystallized ginger
  • 1-1/2 oz. of tequila
  • 3-4 scoops of vanilla ice cream
  • Peach slice, for garnish
  • Crystallized ginger, for garnish

Step 1

Toss the peach slices with the agave and roast under the broiler for about 10 minutes, just until they soften. Alternately, do this on the stove top over medium heat. Let them cool to room temperature.
Puree the peach and ginger in a blender. Add the ice cream and tequila and pulse until you reach the desired consistency. If you want a more firm milkshake, add more ice cream. If you want a less firm milkshake, add either milk or (my suggestion) more tequila to thin it out.
