Cream of Mushroom Meatloaf

Ingredients

  • 2 lbs. ground hamburger
  • 1 cup saltine cracker crumbs
  • 1 envelope Lipton Onion Soup Mix
  • 1 teaspoon coarse black pepper
  • 1/2 cup chopped bell pepper
  • 2 eggs
  • 1/2 cup evaporated milk
  • 1 can cream of mushroom soup (divided)
  • 1 can cream of mushroom soup fot sauce
  • 2-3 cups whole milk

Preparation

Step 1

Preheat oven to 350 degrees F. Spray a large baking dish with a non stick cooking spray; set aside.

In a large bowl, combine saltine cracker crumbs, onion soup mix, black pepper, bell peppers, eggs, milk and mix all together until well blended.

Be careful not to handle the meat mixture to much. Shape into a round bun and place prepared dish.

Bake in the oven for 1 hour or until meatloaf is done. Spoon remainder of soup on top and return to the oven for another 15 minutes. Cool 15 minutes and slice.

To make a sauce for the meatloaf--heat 1 can of mushroom soup adding enough milk to thin out for a sauce. Serve over meatloaf slices
