Bacon Potato Chowder

Ingredients
- 1 medium yukon gold potato
- 1/2 cup celery, chopped
- 4 pieces corn on the cob, kernals removed or 1 can corn
- 1 cup red pepper, diced
- 4 oz Canadian Style back bacon, diced
- 2 cups fat free skim milk
- 1/2 tsp salt
- Ground pepper to taste

Preparation
Step 1
Microwave potato until tender, peel & mash
Coat a large sauce pan with cooking spray, add celery, onion, corn & red pepper, saute for 5 minutes
Stir in bacon & milk
Stir in mashed potatoes
Mix well season as desired
Cover & simmer 10 minutes (do not boil)
