Ingredients

  • 1

    medium yukon gold potato

  • 1/2

    cup celery, chopped

  • 4

    pieces corn on the cob, kernals removed or 1 can corn

  • 1

    cup red pepper, diced

  • 4

    oz Canadian Style back bacon, diced

  • 2

    cups fat free skim milk

  • 1/2

    tsp salt

  • Ground pepper to taste

Directions

Microwave potato until tender, peel & mash Coat a large sauce pan with cooking spray, add celery, onion, corn & red pepper, saute for 5 minutes Stir in bacon & milk Stir in mashed potatoes Mix well season as desired Cover & simmer 10 minutes (do not boil)
