Pumpkin Cake

Ingredients

• 2 cups sugar
• 2 cups pumpkin (1 can)
• 1 1/2 cups oil
• 1 teaspoon vanilla
• 4 eggs
• 3 cups flour
• 2 teaspoons baking powder
• 1 teaspoon baking soda
• 2 teasspoons salt
• 2 teaspoons pumpkin pie spice

Preparation

Step 1

Mix sugar, pumpkin, oil and vanilla together. Add eggs one at a time, beating after each one.

Sift dry ingredients together. Sift into wet ingredients. Mix,k scraping bowl until well mixed.

Bake in tube pan or 2 loaf pans for 60 minutes at 350 degrees.

Note: If pumpkin is really dry - use the full 1 1/2 cups oil. If the pumpkin is moist 0 use only 1 1/4 cups oil.
