Pineapple BBQ Sauce

Ingredients

  • 1 fresh pineapple, peeled, cored and diced
  • 1 white onion, diced
  • 1 clove garlic, minced
  • 1/2 cup cider vinegar
  • 2 tablespoons molasses
  • 2 tablespoons honey
  • 2 tablespoons chipotle chiles in adobo
  • 3 cups ketchup
  • salt and pepper, to taste

Preparation

Step 1

Saute pineapple, onion and garlic in a large pan over medium-high heat until lightly browned. Add vinegar, molasses, honey, chipotles and ketchup. Simmer for 10 minutes, then allow to cool to room temperature. Puree in a blender or food processor. Season to taste with salt and pepper. Store unused sauce in a covered container in the refrigerator.
