Ingredients
- 1 large egg slightly beaten
- 1/4 cup lukewarm water
- 1 teaspoon salt
- 2 cups sifted flour
- 12 plums pitted
- Sugar optional
- 1 tablespoon salt
- 1 tablespoon shortening
- 4 quarts boiling water
- Butter or margarine
Preparation
Step 1
Mix together beaten egg, 1/4 cup water and 1 teaspoon salt. Gradually add flour to form a medium dough. Knead several minutes adding a little flour to prevent dough from sticking to the hands. Cover with clean cloth or dish and let stand 30 minutes to ripen.
Roll dough on floured board to about 1/8" thickness. Do not roll too thin or dough will crack. Cut dough into 3" circles and place a plum in center of each. In plums are tart sprinkle inside with sugar. Fold and press ends together. Crimp edges firmly with a fork. Add 1 tablespoon salt and shortening to boiling water. Bring to boil and drop in dumplings, one at a time until you have 4 in the pot. Stir gently and boil gently for about 10 minutes. Remove and drain.
Melt enough butter or margarine in skillet to form about a 1" layer. Fry dumplings in skillet over low heat, gently spooning butter over them. Serve hot with sprinkled sugar.
