Weight Watchers Buckwheat Pancakes with banana

Ingredients

  • 1 large egg
  • 1 large egg white
  • 1 c low fat buttermilk
  • 1/2 mashed banana
  • 2 t honey
  • 1/2 plus 2T flour
  • 1/2 buckwheat flour
  • 2 t b powder
  • 1/4 t salt
  • 2 t canola oil

Preparation

Step 1

Combine eggs, egg white,buttermilk, and mashed banana.

combine dry ingredients in another bowl.

Stir the dry ingredients into the wet. until just blended

Heat 1 t oil on a nonstick griddle or in large non stick pan.

pour batter 1/4 c at a time. Cook until bubbles appear then flip.

Cook about 2 min.

Serve with extra bananas or fresh strawberries and maple syrup
