Bananas Foster Bread

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 medium bananas, mashed (about 1 1/2 cups)
  • 4 large egg whites
  • 1/2 cup wheat germ
  • 1/4 cup nonfat buttermilk
  • 1/4 cup unsweetened applesauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon rum extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon butter flavoring, imitation
  • 1/4 cup firmly packed light brown sugar

Preparation

Step 1

1. Preheat oven to 350°. Lightly spray an 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan with vegetable oil spray.

2. In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt. Add remaining ingredients except brown sugar and stir just until combined. Don't overmix. Pour into loaf pan and sprinkle evenly with brown sugar.

3. Bake for 1 hour, or until cake tester or toothpick inserted in center comes out clean. Let cool in pan for at least 10 minutes; turn onto rack.

Notes: thought this was excellent! Made some substitutions - including subbing Splenda for sugar, and buttermilk for the applesauce, eggbeaters for egg whites, and vanilla for the rum extract (only because made it to take to John and Alicia's and wasn't sure if rum was a good idea with kids - next time would try with the rum). Also doubled the cinnamon and sprinkled more on top. Delicious and a definite repeater!
