Ingredients

  • 2 lb red potatoes, quartered
  • 1/2 lb bacon strips, chopped
  • 1/2 c mayo
  • 1/4 c creamy Caesar salad dressing
  • 1/4 c ranch salad dressing
  • 3 T sour cream
  • 1 T Dijon mustard
  • 3 green onions, chopped
  • 1/4 c shredded cheddar cheese
  • Coarsely ground pepper, optional

Preparation

Step 1

Place potatoes in lg pan & cover with water. Bring to boil. Reduce heat; cover & cook 15-20 min. until tender.

Meanwhile, cook bacon in lg skillet over med heat until crisp. Remove to paper towels; drain, reserving 3 T drippings. Drain potatoes & place in lg bowl. Add bacon & reserved drippings; toss to coat. Refrigerate until chilled.

Whisk mayo, dressings, sour cream & mustard in sm bowl. Pour over potato mixture; toss to coat. Stir in onions & cheese. Sprinkle with pepper if desired.
