Ingredients

    T. olive oil

  • 1

    small onion, chopped

  • 1-2

    cloves garlic, chopped

  • 1/2

    t. cumin

  • 1/2

    t. salt

  • 1/4

    t. pepper

  • pinch oregano

  • 2

    medium potatoes, peeled and chunked

  • 1/2

    cup chopped green chiles

  • 2

    t. jalapenos, chopped

  • 5

    cups chicken broth

  • Shredded white cheese

  • Sour cream

  • Avocado

  • Flour tortillas

Directions

Heat oil in saucepan, add onion and garlic. Cook, covered, over low heat about 5 minutes for onions to wilt. Uncover pan, raise heat to medium. Add oregano, potatoes, green chiles, jalapenos and chicken broth. Bring to a boil, cover and simmer slowly 45 minutes. When ready to serve, stir in a little sour cream just before serving. Garnish with white cheese, and avocado if desired. Serve with warmed flour tortillas.
