Ingredients
- 2-3 T. olive oil
- 1 small onion, chopped
- 1-2 cloves garlic, chopped
- 1/2 t. cumin
- 1/2 t. salt
- 1/4 t. pepper
- pinch oregano
- 2 medium potatoes, peeled and chunked
- 1/2 cup chopped green chiles
- 2 t. jalapenos, chopped
- 5 cups chicken broth
- Shredded white cheese
- Sour cream
- Avocado
- Flour tortillas

Preparation
Step 1
Heat oil in saucepan, add onion and garlic. Cook, covered, over low heat about 5 minutes for onions to wilt. Uncover pan, raise heat to medium. Add oregano, potatoes, green chiles, jalapenos and chicken broth.
Bring to a boil, cover and simmer slowly 45 minutes.
When ready to serve, stir in a little sour cream just before serving. Garnish with white cheese, and avocado if desired.
Serve with warmed flour tortillas.
