Beer Rice

Ingredients

  • 1 cup brown rice
  • 1 cup beer, dark lager
  • 1 1/4 cups low sodium chicken broth, or homemade chicken stock
  • 1 tablespoon butter, or margarine
  • 1/4 cup peanuts, salted
  • 1/2 teaspoon salt
  • Freshly ground pepper to taste

Preparation

Step 1

1. Preheat oven to 350 degrees.

2. Bring all ingredients together in a large pot and let come to a boil. Once ingredients have come to a boil, pour contents into a 2 1/2 quart casserole dish lightly coated with cooking spray or oil.

3. Cover and bake until liquid is absorbed, about 1 1/4 hours.

Notes: Thought this was great - easy, no fuss, and rice came out perfectly. Had a nice nutty flavor to it. Definite repeat.
