Lentil Soup (charlotte)

Ingredients

  • 3-4 ham hocks
  • 1 lb. 15 Bean Soup Mix
  • 1 cup extra Lentils
  • 1 large onion, chopped – fry until soft
  • 2 quarts (8 cups) water to soaking water 3-4 ham hocks (1 1/2 lbs) fried onion
  • 1 can (28oz) whole tomatoes, broken up
  • 1 – 1 1/2 tsp. chili powder
  • 2 cloves garlic minced or mashed
  • Juice of one lemon or 3 TBSP lemon juice salt and pepper to taste

Preparation

Step 1

Put 15 Bean Soup Mix andLentils – wash, put in large soup pot, cover with water, soak 10-12 hours

 Add to bean pot: 2 quarts (8 cups) water to soaking water 3-4 ham hocks (1 1/2 lbs) fried onion
 
Simmer about 3 hours until beans are soft
 
Remove hocks – separate meat, chop, set aside
 
Mash beans with potato masher or hand-held whip until beans are creamy
 
Add to bean pot: whole tomatoes, broken up, chili powder, garlic minced or mashed
Juice of one lemon or 3 TBSP lemon juice salt and pepper to taste

Simmer 30-40 minutes add ham and heat through
