Bellisimo Sausage And Penne

Ingredients
- 2 hot or sweet Italian pork sausages casings removed
- 1 green bell pepper seeded and diced
- 1 onion chopped
- 1 package frozen artichoke hearts - (9 oz) thawed
- 1/2 package frozen leaf spinach - (10-oz pkg) thawed
- 8 sun dried tomatoes halves (not oil-packed) chopped
- 4 cups hot cooked penne (or farfalle or medium pasta shells)
- 3 tablespoons pine nuts

Preparation
Step 1
Spray a large nonstick skillet with nonstick cooking spray; heat. Add the sausages and cook, stirring as needed, until browned, about 6 minutes. Add the bell peppers and the onion; cook, stirring as needed, until the vegetables are softened, 6 to 8 minutes.
Add the artichoke hearts, spinach and tomatoes; cook, stirring constantly, until heated through, about 5 minutes. Reduce the heat and simmer, covered, stirring as needed, until the vegetables are cooked through and the flavors are blended, about 5 minutes.
Serve the pasta, topped with the sausage mixture; sprinkle with the pine nuts.
