Pork Chops with Orange Broccolini

Ingredients

  • 4 (5 oz) boneless pork chops
  • 1/2 t salt + more for seasoning
  • 1/2 t sweet paprika
  • 1/4 t red pepper flakes
  • 1 T canola oil
  • 1/4 c low sodium chicken broth
  • 12 oz Broccolini
  • 2 T orange marmalade
  • 2 T unsalted butter at room temperature

Preparation

Step 1

Sprinkle all sides of pork chops with salt, paprika & red pepper flakes. Place oil in lg skillet over med high heat. Add pork chops & cook until nicely browned, 4-5 min. Reduce heat to med, turn & cook until juices run clear, 4 min, depending on thickness. Transfer to plate & cover to keep warm.

Pour broth into skillet. Turn heat to high, bring to boil & stir to loosen any browned bits. Add Broccolini, reduce heat, cover & cook until tender, 4 min. Remove from heat. Using tongs transfer Broccolini to plate.

Add orange marmalade to skillet & stir to combine. Add butter & stir very gently just to combine. Season with salt, if needed. Pour sauce over Broccolini & serve with pork chops.
