Slow Cooker Mongolian Beef

Ingredients
- 1 1/2 lbs. Beef Flank Steak (cut in stir fry size)
- 1/4 cup cornstarch
- 2 TSP. Olive Oil
- 1/2 tsp. Minced Ginger
- 2 cloves of garlic, minced
- 3/4 cup soy sauce
- 3/4 cup water
- 3/4 cup brown sugar
- 1/2 cup shredded carrots
- 3 medium green onions, chopped

Preparation
Step 1
-Spray slow cooker w/ non-stick spray
-Dredge steak in cornstarch & place in crock pot
-Combine remaining ingredients in a bowl & pour over beef in crock pot
-Cook 2-3 hrs on High, or 4-5 hours on Low
-Serve over Rice
-Top with sliced green onions
