Ingredients

  • 4

    lb pork tenderloin

  • 1

    T oregano

  • 1

    T basil

  • 2

    T minced red onion

  • 1

    T minced garlic

  • 1

    t marjoram leaves

  • 1

    t rosemary leaves

  • ½

    c balsamic vinegar

  • 2

    c dry red wine

  • ¼

    c EVOO

  • 1

    t Coarse ground pepper

  • 1

    t Sea salt

Directions

Slice pork tenderloin into 1/2 in slices, trim fat & cut each slice in the center to make medallions. Put medallions into skillet with oil. Season with pepper & salt. Brown both sides. Remove & place in 9x13 casserole dish. In bowl mix remaining ingredients. Pour over medallions. Cover with foil. Bake at 375 for 2 hrs. Remove foil & bake for 15 more min.
