Ingredients
- 2 T unsalted butter
- 2 cloves garlic, sliced
- 4 oz white mushrooms, sliced
- 4 c fresh baby spinach, washed & drained
- Salt & pepper to taste
- 1 lb cooked angel hair pasta
- 3 T EVOO
- 1/4 c shredded Parmesan cheese

Preparation
Step 1
Preheat sauté pan over med heat. Add butter & garlic; cook 30 sec. Add mushrooms & cook 2 min. Add spinach, salt & pepper to taste; cover & cook 1 min until greens are wilted. Add to cooked pasta; drizzle with oil & top with Parmesan. Refrigerate any leftovers.
