Ingredients
- 1 1/2 cups uncooked pearl barley
- 1 cup fresh corn kernels
- 1 cup diced seeded plum tomatoes, (about 2 small)
- 1/2 cup chopped green onions
- 1/4 cup chopped fresh parsely
- 20 olives, coarsely chopped
- 3 TB frsh lemon juice
- 2 TB olive oil
- 1/4 tsp pepper
- 1 garlic clove, minced
- 3/4 cup crumbled feta cheese
Preparation
Step 1
1. Cook barley according to pkg directions, omitting salt. Drain and rinse with cold water. Cool completely. Combine barley, corn and next 4 ingredients in a bowl. Combine juice and next 4 ingredients, stirring well with a whisk. Drizzle over barley. Toss to coat. Sprinkle with the cheese.
