Ingredients

  • 1 T olive oil
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 1 1/4 pounds skinless boneless turkey or chicken, cut into 1/2 inch pieces
  • 2 cups cooked wild rice
  • 1 (15oz) can Great Northern beans, drained
  • 1 (11oz) can while corn, drained
  • 2 (4oz) cans chopped green chilies
  • 1 (14.5oz) can chicken broth
  • 1 tsp cumin
  • 2 tsp chili powder
  • 1 tsp salt
  • Hot pepper sauce to taste
  • sour cream
  • shredded Monterey Jack cheese

Preparation

Step 1

1. Heat oil in large skillet over medium heat. Saute onion and garlic
2. Add turkey, wild rice, beans, chilies, corn, broth, cumin, chili powder and salt, cover and simmer over low heat for 30 mins.
3. Add hot pepper sauce to taste and serve with sour cream and shredded cheese
