Pasta with Pesto
- 1 pkg fresh basil
- 1/3 c pine nuts or walnuts
- 2 cloves garlic
- 1/3 c EVOO
- 1/2 c Parmesan cheese, finely grated
- 3/4 lb favorite pasta
Bring lg pot of water to boil; cook pasta according to pkg directions while you prepare the Pesto. Place fresh basil leaves only along with nuts & garlic in food processor or blender. Process until finely chopped.
With the machine running, pour in oil in a thin stream. Add the cheese, salt & pepper to taste & process briefly to combine. Thin with 2 T hot water. (Can use water in which pasta was cooked.)

Toss pesto with hot pasta (cooked & drained) & serve.
