Baked Pasta with Spicy Tomato & Sausage Sauce (Niki's)

Ingredients

  • 1 lb hot Italian sausage
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 (26oz) boxes pomi marinara sauce
  • 6 T basil pesto
  • Salt & pepper to taste
  • 6 oz bag fresh spinach
  • 1 c Parmesan cheese, finely grated
  • 1/2 lb mozzarella cheese, finely diced
  • 1 lb penne pasta

Preparation

Step 1

Heat lg Dutch oven over med high heat, add sausage. Cook breaking up sausage, 5 min until no pink. Add onion & sauté for 5 min until softened, stirring frequently to evenly cook onion. Add garlic & cook 1 min. Add marinara sauce & reduce heat to med. Simmer 10 min until sauce starts to thicken. Stir in pesto, salt & pepper. Taste & adjust seasoning. Set aside.

In lg pot of boiling salted water, cook pasta 10 min until al dente. Drain well. Preheat oven to 375. Oil a 9x13 baking dish. Spread thin layer of sauce on bottom of dish.

In lg bowl combine pasta with remaining sauce, diced cheese, 1/3 c Parmesan & spinach. Pour in baking dish with remaining Parmesan. Bake 30 min until bubbly & cheese browns.
