Cornbread - Spicy

Ingredients

  • Self rising cornmeal 1 1/2 C
  • self rising flour 1/2 C
  • sugar 1/4 C
  • chili powder 1 TB
  • eggs 2
  • milk 1 1/3 C
  • oil 1/4 C
  • corn kernels 1/2 C
  • Jalapenos 2 diced
  • red onion 1/4 C
  • lime juice
  • Monterey Jack cheese - for topping

Preparation

Step 1

Preheat oven to 450.
Soak corn and onions in lime juice.
After 15 min strain the lime juice off.
Mix together all dry ingredients.
Mix in the milk, eggs, corn, jalapenos, onion.
Place cast iron skillet in oven to warm.
Coat skillet with oil.
Place back in oven for 1 min.
Pour batter into skillet.
Bake 25 min.


When the cornbread comes out of the oven top it with Monterey Jack cheese.
