Candied Ginger, Mango, and Lime Spread

Ingredients

  • 2 large mangos, peeled, halved, and pitted
  • 1/3 cup freshly squeezed lime juice
  • 1/3 cup candied or crystallized ginger, thinly sliced
  • 2 tbs honey

Preparation

Step 1

Preheat oven to 300F. Puree the mangos in a food processor with the juice, ginger, and honey. Place in a glass baking dish and bake for 60-75 minutes, stirring 2 or 3 times, or until reduced by half and thickened like fruit butter. If desired, season with nutmeg. Spoon into hot sterilized jars and seal. Refrigerate for up to one week.
