  • 2 cups flour
  • 1 tablespoon sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 2/3 cup milk
  • 1 egg

Step 1

1. Mix flour with other dry ingredients.
2. Butter is cut in until the mixture resembles coarse crumbs. Two knives or a pastry blender may be used.
3. Beat egg into the milk. Add the liquid slowly into the center of the dry ingredients; stir lightly with a fork until the dough follows the fork around the bowl. Turn onto a lightly-floured surface and knead gently about 30 seconds or just enough to form a smooth ball. Pat or roll to 1/2 or 3/4-inch thickness.
4. Dip a biscuit cutter in flour and cut straight down through the dough; do not twist. Cut biscuits close together. Collect remaining bits and pat them flat; do not knead or roll again. Cut rest of
biscuits.
5. Place biscuits on ungreased pan or cookie sheet about 1 inch apart for crusty sides or close together for soft sides.
6. Bake at 450* for 10-15 minutes.
7. Yield 12-15 two-inch biscuits. Recipe doubles successfully. Biscuits are best when served fresh and warm.
