Ingredients
- 1 cup all purpose flour
- 1 cup semolina flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large eggs, separated
- 1 1/2 cups plain yogurt
- 1/2 cup milk
- 1/4 cup olive oil
- 1 1/2 cups kalamata olives
- 1/4 cup chopped bail for sprinkling
Preparation
Step 1
In one bowl mix dry ingredients, in another beat egg whites until soft peaks form, and in another mix wet ingredients. Add wet to dry, add olives, and fold in egg whites gently. Cook until golden.
Serve with a spoonful of Tapenade or Sun-Dried Tomato Pesto and sprinkle with basil.
