Lemon Posset

Ingredients

  • 2 cups 35% cream
  • 3/4 cup sugar
  • zest of one lemon
  • 5 Tbsp freshly squeezed lemon juice
  • sweetened whipped cream (optional)

Preparation

Step 1

Place the cream, sugar and lemon zest in a saucepan and bring to a boil, stirring occasionally to dissolve the sugar. Reduce the heat to a simmer and leave to bubble for about 3 minutes, stirring from time to time, being careful that it doesn't boil over. Remove from the heat and stir in the lemon juice. Let cool until warm to the touch and strain into 4 small wine glasses, cover with saran wrap and allow to chill several hours or overnight. Serve with a dollop of whipped cream. Makes 4 servings.
