Crockpot Chicken Cacciatore

Ingredients

  • 1 & 1/2 lbs boneless, skinless chicken thighs
  • (NOTE: The second time I made this, I only had chicken breasts on hand and that also tasted great! The vegetarian Morningstar Chikin Strips worked great for vegetarian option)
  • 3-4 garlic cloves, minced
  • 28 oz diced tomatoes
  • 6 oz tomato paste
  • 1/2 red bell pepper, thinly sliced
  • 1/2 green bell pepper, thinly sliced
  • 1 small onion, diced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 bay leaf
  • 1/4 cup water
  • 1 package of your favorite pasta, prepared as directed on box

Preparation

Step 1

Start by seasoning chicken well with salt and pepper. Add the rest of ingredients EXCEPT for the pasta. Stir well to combine.
Cover and set crockpot on LOW for 7 hours or on HIGH for 4 hours.
Serve over a bed of your favorite pasta.
