Ingredients
- 1 lb orange candy slices, chopped
- 1-8oz package of dates, chopped
- 2 cups pecans or walnuts, chopped
- 1- 3 1/2 oz can (1 1/2 cups) of flake coconut
- 2 sticks of softened butter
- 2 cups sugar
- 4 eggs
- 1/2 tsp salt
- 1 tsp vanilla
- 1 tsp rum flavoring
- 1 1/3 cups buttermilk
- 1/2 tsp baking soda
- 2 1/2 cups all purpose flour (1/2 cup for candy, dates & nuts)
- Glaze (optional): 2 cups confectionary sugar and 1/2 cup orange juice
Preparation
Step 1
Preheat oven to 350 degrees. Flour and grease 1 tube pan or 3-4x8 loaf pans. Bake tube 1 hour 20 min and loaf pan 1 hour.
1. Mix chopped orange slices, dates and nuts with 1/2 cup of flour, set aside.
2. In a separate bowl, cream together butter, sugar and add eggs to it one at a time until blended well. Add salt, vanilla, rum flavor to that.
3. Measure buttermilk and add 1/2 tsp baking soda to it. Mix into creamed butter mixture. Add the coconut. Add flour and mix well, fold in candy, dates and nuts.
4. Pour into prepared baking tube or loaf pan and bake. Remove from oven and let it sit in pan until it is cooled. Run a knife around the edges and pour the glaze mixture over the cake and around the edges until it sets up. (Glaze is optional) Turn out of baking pan. May be frozen.
